Moisture from you hands can actually be corrosive to some watch parts. One of the main rules of watchmaking is to leave no trace behind that a watch has been serviced - no scratches, no fingerprints, no dust. The rubber gloves actually get my hands really sweaty inside and real watchmakers use finger cots instead of full gloves.
