  1. Decided to bump up my croissant game by making my own butter. There are already a ton of YouTube videos on how to do this, but none of them tell you exactly how much cream yields exactly how much butter. This is the first time I have tried this and it is kind of like magic (although people have been making butter for over 4,500 years!). In my test, 2 cups of heavy whipping cream + a kitchenaid mixer x 9 minutes = 6.13 oz butter and 1 cup buttermilk. Now I know I will need 2 5/8 cups of cream to make enough butter for one batch of croissants.   2. John, Let us know if you notice a difference in "fresh" butter to store bought. I like to bake bread and other things and wonder if there is a difference. THanks... enjoy the video as always...

  3. I miss having my cow and milking her and all the fresh butter and cheese on hand during her fresh months. She was a good milker. even left her calf on her and still milked out three gallons a milk a day. I had so much I shared with next door neighbor family. Alas I can no longer milk due to arthritis and I had to give her to another home. She was a big 1500 pound baby half Angus half Holstein.

    Some times when I feel like indulging in a super rich cup of coffer and I do not keep cream on hand now, I will whip in a big pat of butter with about 1/4 cup coffee to get it melted and whipped with out it going all over the kitchen then fill my cup the rest of the way with coffee. OH so good. If you whip it good and drink it hot it does not taste/feel oily.
