HARDBOILEDEGGS

Was pricing fencing materials again this morning on McCoys website.  www.mccoys.com   The time is right to pull the trigger - field fencing and barbed wire are on sale.  Tracked down the tractor guy and we are good to go this weekend (fingers crossed).

My part time SW neighbor Dona Lu came out to work on her place for the weekend.  She pre-built studded walls for an out house building and needed a second pair of hands holding the parts so she could lag screw them together.  Quite impressed with her design and carpentry skills. 

The girls have been doing their part about every other day now.  Egg salad with tuna and cheese on tortillas for dinner tonight.  Actually did an internet search about hard boiled eggs today.  Mine have been hard to peel cleanly.  Seems that is the case with REALLY fresh eggs.  83,93,57,0,C, .26

Add salt to the boiling water, this usually works.

John, probably a stupid comment, but do you plunge your eggs in cold water immediately after boiling them? That normally causing the contraction of the (inner) membrane and allows the egg to peel cleanly.

I have this same issue with my fresh eggs, i've tried everything, salt, vinegar, cold dip. nothing works, but to let some eggs sit in fridge for a week or two before you boil them.

Mine have always been hard to peel, the only thing that really works every time is steaming them. When I do that, they are fairly easy.

I have never tried this, but I just watched a video on the "Sun Oven" and they say that using this solar oven with your own fresh eggs allows the eggs to peal easily. Might be just the ticket!

I second Dani's comment. Cold water always works for me. To help the cold water get in, I crack the shell a tiny bit. Let it sit for a minute and the shell slides right off.
