Coming across my old video of croissant making that I shot for the City Bakery in NYC was what got me started on this whole bread baking adventure. Now 50 lbs of flour later, I am finally getting around to my first attempt at making croissants. This is the prep day of mixing , kneading, and folding the butter into the dough. I have made those pre fab crescent rolls and they are a bit lacking...except for ingredients. Enriched Flour Bleached (wheat flour, niacin, ferrous sulfate, thiamin mononitrate, riboflavin, folic acid), Water, Soybean and Palm Oil, Sugar, Hydrogenated Palm Oil, Baking Powder (baking soda, sodium acid pyrophosphate, sodium aluminum phosphate). Contains 2% or less of: Partially Hydrogenated Soybean Oil, Mono and Diglycerides, Vital Wheat Gluten, Dextrose, Salt, Potassium Chloride, Xanthan Gum, Artificial Flavor, Preservatives (TBHQ, alpha tocopherol, citric acid), Yellow 5, Color Added, Red 40. My Field Lab Solar Oven Croissants have only six ingredients: flour, butter, milk, sugar, salt, yeast.

Okay, I'm impressed. I was completely hooked watching the process, much like the City Bakery video. Please, you have to do a part 2 with the final rolling of the individual croissants and then the baking. I'm really wanting to see how it all turns out. Thanks for the video!
